This vegan, veggie packed breakfast scramble will satisfy the most voracious appetites. The only thing better than starting your day with a savory warm breakfast is knowing that it is super nutritious to boot. A touch of tofu never tasted so good!
For 2 people
Slice the tofu into approximately one inch cubes. Then, using your hands, crumble it slightly. Sauté onion, pepper, garlic and crumbled tofu in oil for 5-10 minutes, stirring often. Add remaining ingredients, reduce heat to medium and allow to cook 5-10 more minutes, stirring frequently and adding more oil if needed.
