Baby Spinach Salad with Blueberries and Walnuts

Baby Spinach Salad with Blueberries and Walnuts

Ingredients

For 1 people

  • 1 pound(s) small red onion, thinly sliced

  • 1/2 cup(s) nuts, walnuts, english
  • 1/2 cup(s) fresh blueberries
  • 1/4 cup(s) cup crumbled feta
  • 2 tablespoon(s) olive oil
  • 1 tablespoon(s) balsamic vinegar

Directions

In a medium bowl, toss together baby spinach, red onion and chopped walnuts. Add blueberries and feta cheese. In a small bowl, whisk together olive oil and balsamic vinegar. Drizzle over salad and toss gently to coat. Serve immediately.
Try with added pear or apple slices for an extra sweet treat!
