Best Cannellini Beans Chili

Warm up with this delicious chili recipe. The heart healthy cannellini beans combined with chunks of chicken and delicious green chilies gives it just the kick your tastebuds hunger for. Serve after pouring hot pepper sauce in the chili, and garnish with parsley and shredded cheese. Excellent with muffins!


Best Cannellini Beans Chili

Ingredients

For 8 people

  • 1/2 ounce(s) salad oil
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 teaspoon(s) ground cumin
  • 2 whole large chicken breasts, skinned, boned & cut into ½ inch chunk
  • 1 3/4 cup(s) white kidney beans (cannellini), drained
  • 1 garbanzo beans, drained
  • 1 1/2 cup(s) can corn, drained
  • 8 tablespoon(s) chopped green chilies
  • 2 chicken flavor bouillon cubes or envelopes
  • 1/10 teaspoon(s) Hot pepper sauce
  • 5 Parsley sprigs for garnish
  • 4 ounce(s) Monterey Jack cheese, shredded

Directions

  1. About 1 1/2 hour before serving:
  2. Preheat oven to 350 degrees. In small saucepan over medium heat, in hot oil, cook onion, garlic and cumin until onion is tender.
  3. In 2 1/2 quart casserole, combine onion mixture with chicken, white kidney beans, garbanzo beans, corn, and green chilies, bouillon and 1 1/2 cup water. Cover casserole and bake 40 to 50 minutes until chicken is tender.
