Black Bean Burgers

Veg out with these fabulous black bean burgers. No buns about it. If you want to bypass the beef, opt for this healthy alternative that's every bit as good. You won't even miss the meat.


Black Bean Burgers

Ingredients

For 1 people

  • 1 3/4 cup(s) black beans, drained
  • 1/3 cup(s) diced and sautéed onions
  • 2 slices multigrain bread, finely crumbled
  • 1/2 teaspoon(s) garlic powder
  • 1/2 teaspoon(s) black pepper
  • 1/4 teaspoon(s) salt
  • 1/2 cup(s) cracker crumbs
  • 2 1/2 tablespoon(s) olive oil

Directions

In a large bowl, mash the drained black beans. Add the sautéed onions, crumbled bread, and spices. Mix thoroughly. Add 1/4 cup of cracker crumbs (or just enough to be able to form patties from the mixture). Form the mixture into 1/2-inch thick patties. Gently coat each patty with more cracker crumbs. Heat oil in non-stick pan over medium heat. Fry both sides of the patties.
Serve with a garnish of lettuce, tomatoes, avocado, and any other condiments on buns or over a bed or rice.
