Ingredients

For 4 people

  • 15 ounce(s) dark red kidney beans or black beans, drained, rinsed
  • 10 ounce(s) frozen whole kernel corn, thawed
  • 1 medium tomato, peeled, seeded and chopped
  • 1/4 cup(s) sliced scallions
  • 1 jalapeno pepper, minced
  • 1/4 cup(s) chili sauce
  • 3 tablespoon(s) vegetable oil
  • 2 tablespoon(s) apple cider vinegar
  • 1 teaspoon(s) chili powder
  • 1/2 teaspoon(s) cumin
  • 1/4 teaspoon(s) salt
  • 1/8 teaspoon(s) pepper
  • 1 lettuce leaves

Directions

In large bowl, combine first 5 ingredients. In small bowl, combine chili sauce and remaining ingredients except lettuce; pour over vegetables and stir to coat. Chill and serve on lettuce.
