Pinto Chili

Pinto Chili

Ingredients

For 4 people

  • 2 cup(s) pinto beans
  • 5 cup(s) canned tomatoes, drained
  • 16 ounce(s) chopped green pepper
  • 1 1/2 tablespoon(s) salad oil
  • 24 ounce(s) chopped onion
  • 2 crushed garlic cloves
  • 8 tablespoon(s) chopped parsley
  • 40 ounce(s) ground chuck
  • 16 ounce(s) ground pork
  • 5 1/3 tablespoon(s) spices, chili powder
  • 2 tablespoon(s) salt
  • 1 1/2 teaspoon(s) pepper
  • 1 1/2 teaspoon(s) cumin seed
  • 1/2 cup(s) butter

Directions

  1. Wash beans and soak overnight in 2 inches water above beans. Simmer, covered, in same water until tender. Add tomatoes and simmer 5 minutes. Saut green pepper in salad oil for 5 minutes. Add onion, cook until tender, stirring often. Add garlic and parsley. Melt butter in large skillet and saut meat for 15 minutes. Add meat to onion mixture, stir in chili powder and cook 10 minutes. Add this to beans and spices. Simmer covered for 1 hour. Cook uncovered for 30 minutes. Skim off fat.
