Apricot Pork Chops
Fit these tangy sweet and sour pork chops into your low sodium diet by using a low sodium soy sauce.
Ingredients
For 4 people
- 1 cooking spray
- 4 (4 oz.) boneless loin pork chops
- 1/4 cup(s) chopped onion
- 1/4 cup(s) apricot preserves (may use peach preserves or orange marmalade)
- 1 tablespoon(s) low sodium soy sauce
- 2 teaspoon(s) minced garlic
- 1/4 teaspoon(s) salt
- 1/4 cup(s) sliced green onions, if desired
Directions
Heat a large non-stick skillet over medium high heat and coat pan with cooking spray. Add pork to pan; cook 6 minutes on each side or until done. Remove from pan; keep warm. Add chopped onion to pan; sauté 4 minutes or until lightly browned. Stir in preserves, soy sauce, garlic, and salt; cook 3 minutes or until thickened. Add pork to pan, turning to coat. Sprinkle with green onions, if desired.
Serving: 1 pork chop with 1 tbsp. sauce.
