Asian Kabobs
These Asian kabobs utilize chicken meatballs, pineapple and green peppers for exciting exotic flare. Serve on top of rice for a complete feast.
Ingredients
For 14 people
- 1 pound(s) ground chicken, raw
- 1/3 cup(s) cracker meal
- 1 egg
- 1/4 cup(s) onion
- 1 large green pepper cut in 21 pieces
- 1 teaspoon(s) ground ginger
- 1 garlic clove, crushed
- 20 ounce(s) can chunk pineapple drained, reserving juice
- 1 large red pepper cut in 21 pieces
- 1/3 cup(s) pineapple chunks, pineapple juice
- 2 tablespoon(s) orange marmalade
- 2 tablespoon(s) butter
- 1 1/2 teaspoon(s) ground ginger
Directions
- In medium bowl, mix chicken, cracker meal, egg, onion, ginger and garlic. Shape into 28 (1 1/4 inch) balls. Arrange on 14 (8 inch) wooden skewers with pineapple chunks and pepper pieces. Place on broiler pan.
- To make sauce: In small bowl, stir together pineapple juice, melted butter, orange marmalade and ginger until blended. Brush over kabobs. Broil 4 inches from heat source for approximately 20 minutes, turning once and basting with sauce.
