Asparagus Salad
Add a little awesomeness to the dinner table with this delightful asparagus salad. Not only does asparagus add a load of heart healthy nutrition to the plate it also scores high on flavor. The preparation time is short and the results are savory. Your plain old pasta salad just had a grade “A” transformation. Go green!
Ingredients
For 8 people
- 1/2 cup(s) olive oil
- 32 ounce(s) asparagus, cut into 1-inch pieces
- 2 tablespoon(s) garlic powder
- 2 tablespoon(s) onion powder
- 16 ounce(s) penne, cooked and drained
- 2 tablespoon(s) dried rosemary
- 2 teaspoon(s) seasoned salt
- 1/2 cup(s) mayonnaise
Directions
In a large saucepan, bring 4 cups of water to a boil for 1 minute. Add asparagus; cover and boil 3 minutes longer. Drain and immediately place in ice water; drain and pat dry. Cook pasta according to package directions; drain and combine with asparagus. In a jar with a tight-fitting lid, combine remaining ingredients; shake well. Drizzle over salad and toss to coat. Chill or serve immediately.
