Asparagus Salad

Asparagus puts a new twist on those plain old pasta salads. The addition of this healthy and hearty vegetable is sure to change the way you look at this potluck staple forever. Go green!

Asparagus Salad


For 8 people

  • 1/2 cup(s) olive oil
  • 32 ounce(s) fresh asparagus, cut into 1/2" - 1" pieces
  • 2 tablespoon(s) garlic powder
  • 2 tablespoon(s) onion powder
  • 2 tablespoon(s) dried rosemary
  • 2 teaspoon(s) seasoned salt
  • 1 cup(s) mayonnaise


In a skillet, saut asparagus in olive oil until tender crisp, about 4-6 minutes. Sprinkle garlic powder and onion powder on top of asparagus and cook for 1-2 more minutes. Pour over hot pasta and toss to coat. In a bowl, mix rosemary, seasoned salt, and mayonnaise. Add mayonnaise mixture to pasta mixture and stir until ingredients are mixed through. Refrigerate 2 hours or until chilled and serve.
