Aunt P's Tofu Scramble

Ingredients
1/2 yellow onion, diced
1/2 red bell pepper, diced
1 block firm or extra firm tofu, drained and pressed
2 tbsp. olive oil
2 cloves garlic, diced
1 tsp. curry powder
1/2 tsp. dried parsley
1/4 tsp. Herbamare Organic Herb Seasoning Salt
1 tbsp. Bragg Liquid Aminos or soy sauce
2 tbsp. nutritional yeast
Few dashes of paprika
Few dashes cracked black pepper
Methods/steps
Slice the tofu into approximately one inch cubes. Then, using your hands, crumble it slightly.
Sauté onion, pepper, garlic and crumbled tofu in oil for 5-10 minutes, stirring often.
Add remaining ingredients, reduce heat to medium and allow to cook 5-10 more minutes, stirring frequently and adding more oil if needed.
