Bailey's Black Bean Burritos
Love burritos? Then you’ll love these black bean blankets of goodness. Super good, super healthy and super easy to make; this is a great quick and easy meal and it is vegetarian. Bring on the beans!
Ingredients
For 6 people
- 1 teaspoon(s) cumin
- 1 teaspoon(s) garlic powder
- 15 ounce(s) black beans, rinsed & drained
- 1 can whole kernel corn, drained
- 1/2 cup(s) salsa, thick & chunky
- 1 green bell peppers, diced
- 6 flour tortillas
Directions
1. Spray skillet with non-stick cooking spray. Add all ingredients except for the tortillas and cool for 10 minutes. 2. Heat tortillas in a covered microwave-safe container in the microwave for 1 minute rotating 1/4 turn halfway through cooking. 3. To serve, place ingredients in tortilla and fold end in & roll up burrito style. 4. Serve as is, or with salsa and light sour cream.
