Baked Smoked Sausages
Where there's smoked, there is this hearty sausage casserole. A colorful medley of potatoes, onions, and carrots, the dish requires little prep. Dinner doesn't get any easier than this.
Ingredients
For 4 people
- 32 ounce(s) red potatoes cut in chunks
- 1 medium onion cut in chunks
- 16 ounce(s) fresh baby carrots
- 16 ounce(s) smoked sausage, sliced
- 1 olive or vegetable oil
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
Directions
- Preheat oven to 375 degrees. In 9x13 casserole dish, toss together vegetables, sausage, and a sparing drizzle of oil. Sprinkle generously with salt and pepper. Cover and bake for approximately 1 hr. or until potatoes are tender. Adjust seasoning to taste and serve.
