Baked Stuffed Mushrooms

Prepping finger foods for a party can be time consuming. These button mushrooms, stuffed with parsley, scallions, butter, and breadcrumbs are an exception to the rule. A fast fix, prepare to watch how fast they disappear.


Baked Stuffed Mushrooms

Ingredients

For 5 people

  • 20 white button mushrooms
  • 2 tablespoon(s) parsley, chopped
  • 2 tablespoon(s) scallions, chopped
  • 1 tablespoon(s) butter, melted
  • 1/3 ounce(s) fresh lemon juice
  • 1/4 teaspoon(s) salt
  • 1/8 teaspoon(s) pepper
  • 1/4 cup(s) breadcrumbs

Directions

  1. Preheat oven to 375 degrees. Wipe mushrooms with a damp cloth and remove their stems.
  2. Chop stems finely. Place in a small bowl with parsley, scallions, butter, lemon juice, salt and pepper.
  3. Stuff each mushroom cap with filling, mounding slightly.
  4. Sprinkle breadcrumbs on top. Set stuffed mushrooms on a baking sheet.
  5. Bake 8-10 minutes, or until filling is heated through and mushrooms are tender but still firm. Serve warm.
