Bean & Potato Pot
When you need a simple, starchy side with plenty of fiber, this veggie-packed potato dish fits the bill. Serve up some homestyle comfort food with whatever meat you make.
Ingredients
For 4 people
- 2 ounce(s) bacon
- 1 1/2 cup(s) green beans (approx. .5 lbs)
- 4 potatoes, peeled and cut in quarters
- 1 pearl onions
- 3 ounce(s) butter
- 1 dash(es) salt
- 1 dash(es) pepper
Directions
Boil the potatoes until just about soft. Add some frozen pearl onions, fresh green beans. Add the bacon that has been previously fried. Boil until soft, as you want, strain, add a touch of butter, salt and pepper.
