Best Black Bean Soup

Ingredients
For 8 people
- 2 tablespoon(s) olive oil
- 1 cup(s) chopped white onions
- 1/3 tablespoon(s) chopped fresh ginger
- 1 teaspoon(s) chopped fresh garlic
- 1/2 teaspoon(s) cayenne pepper
- 1 teaspoon(s) dried thyme
- 3/4 teaspoon(s) allspice
- 1/8 teaspoon(s) celery salt
- 3 cup(s) vegetable broth
- 1 3/4 cup(s) tomato puree
- 2 cup(s) refried black beans
- 1/8 teaspoon(s) black pepper
- 1 teaspoon(s) white sugar
- 3 3/4 cup(s) cans black beans, rinsed and drained
- 2 floz fresh lemon juice
- 8 ounce(s) container sour cream
Directions
Heat the olive oil in a large saucepan over medium heat, and cook the onion until tender. Mix in ginger and garlic, and season with cayenne pepper, thyme, allspice, and celery salt. Pour in the broth. Mix in tomato puree, refried black beans, black pepper, and sugar. Cook and stir until heated through. Mix the remaining black beans and lemon juice into the soup. Continue cooking until heated through and top each serving with a dollop of sour cream.
