Best Meatballs in Lemon Sauce Crock-Pot

Ingredients
For 6 people
- 24 ounce(s) beef, minced
- 3 slices bread, torn into soft crumbs
- 4 cloves garlic, crushed
- 1/8 cup(s) parsley, chopped
- 2 tablespoon(s) mint, chopped
- 1 teaspoon(s) paprika
- 1 teaspoon(s) salt
- 1 dash(es) pepper
- 2 eggs
- 1 cup(s) can tomato sauce
- 2 tablespoon(s) lemons, grated rind of
- 1/4 cup(s) lemon juice
- 1 dash(es) salt
- 1 dash(es) pepper
- 1 tablespoon(s) mint, minced
Directions
Combine and mix all the first 9 ingredients for the meatballs and form into walnut-sized balls and place in crock-pot. For the lemon sauce: 8 oz. can tomato sauce grated rind of 2 lemons and 1/4 cup lemon juice salt and pepper to taste plus 1 tbsp. minced mint. Mix the sauce ingredients together and pour over the meatballs. Cover and cook on “low” for 4 - 6 hours. Serve with rice.
