Best Sour Cream Soup
I scream, you scream, your family will all scream “yummy” for this sour scream soup! This is an “all you can mix” soup which requires some chopping. It is loaded with hearty vegetables, potatoes and crispy bacon. Be prepared for your brood begging for seconds!
Ingredients
For 4 people
- 8 ounce(s) bacon, diced
- 3/4 cup(s) cabbage, chopped
- 1/2 cup(s) onions, chopped
- 1/2 cup(s) celery, chopped
- 1/2 cup(s) carrots, chopped
- 3/4 cup(s) potatoes, chopped
- 3/4 cup(s) zucchini, sliced
- 4 cup(s) tomatoes, peeled
- 4 cup(s) beef broth
- 1/4 cup(s) barley
- 1/4 cup(s) rice
- 2 cup(s) white sauce
- 1/2 cup(s) vinegar
- 1 clove garlic, minced
- 1 teaspoon(s) caraway seeds
- 1 teaspoon(s) salt
- 2 teaspoon(s) Worcestershire sauce
- 1/4 teaspoon(s) thyme
- 1 cup(s) sour cream or plain yogurt
Directions
Sauté bacon in heavy pot. Add cabbage, onion, celery, carrots, potato and zucchini; reduce heat and simmer about 20 minutes. Add tomatoes, beef broth, barley, and rice; simmer 2 hours. Blend in white sauce, vinegar, garlic, caraway seed, salt, Worcestershire, and thyme. Simmer about 15 minutes. Adjust seasonings if necessary and garnish with sour cream and serve.
