Blake's Zucchini Cakes
You can have your zucchini cake and eat it too! When it comes to these fritters, fried does not equal heavy. Light, crispy and full of flavor these little cakes are perfect as a side dish or served as an appetizer.
Ingredients
For 6 people
- 3 medium zucchini, shredded
- 1/2 teaspoon(s) salt
- 1/2 cup(s) finely chopped yellow onions
- 1 tablespoon(s) butter or margarine
- 2 eggs, slightly beaten
- 1/4 cup(s) flour
- 1/8 teaspoon(s) pepper
- 1 tablespoon(s) Oil (for frying)
Directions
Put shredded zucchini in colander, squeeze as much liquid out as possible. Sprinkle salt on zucchini. Place in large bowl and set aside. Sautee onion in butter, drain and add to zucchini. Use a separate bowl to mix eggs, flour and pepper. Pour mixture to zucchini, stir well. Drop mixture into rounded teaspoons, into well oiled frying pan, flatten slightly, cook 4 minutes on each side.
