Burgundy Mushrooms (Diabetic Recipe)

Mushroms simmered with Burgundy wine, onions and beef broth are a quick fix side dish that is diabetes-friendly. This dish can be served at your next dinner party, or as a simple brunch side.

Burgundy Mushrooms (Diabetic Recipe)


For 4 people

  • 1/2 cup(s) diced onion
  • 1 1/4 cup(s) beef broth
  • 2 cup(s) whole mushrooms (2 8-oz cans), drained, liquid reserved from one can
  • 2 2/3 ounce(s) Burgundy wine


In a small saucepan, simmer the onion for 15 minutes in beef broth. Add mushrooms, reserved liquid, and wine, and simmer another 15 minutes, or until liquid is reduced by half. Serve warm
