Cabbage Salad
This meal is called Curtido and is originally from El Salvador. It's usually prepared with pickled cabbage, onions, carrots, and lemon juice or vinegar. If you're looking for a salad that will help you get a "head" of the game, try this tasty one on for size.
Ingredients
For 6 people
- 1 medium head cabbage, chopped
- 2 small carrots, grated
- 1 small onion, sliced
- 1/2 teaspoon(s) dried red pepper
- 1/2 teaspoon(s) oregano
- 1 teaspoon(s) olive oil
- 1 teaspoon(s) salt
- 1 teaspoon(s) brown sugar
- 1/2 cup(s) vinegar
- 4 ounce(s) water
Directions
- Blanch cabbage with boiling water for 1 minute. Discard water.
- Place cabbage in large bowl and add grated carrots, sliced onion, red pepper, oregano, olive oil, salt, brown sugar, vinegar, and water.
- Place in refrigerator for at least 2 hours before serving.
