Cabbage Salad
This meal is called Curtido and is originally from El Salvador. It's usually prepared with pickled cabbage, onions, carrots, and lemon juice or vinegar. If you're looking for a salad that will help you get a "head" of the game, try this tasty one on for size.
Ingredients
For 8 people
- 1 medium head of cabbage, chopped
- 2 small carrots, grated
- 1 small onion, sliced
- 1/2 teaspoon(s) dried red pepper
- 1/2 teaspoon(s) oregano
- 1 teaspoon(s) olive oil
- 1 teaspoon(s) salt
- 1 teaspoon(s) brown sugar
- 1/2 cup(s) vinegar
- 1/2 cup(s) water
Directions
In a large bowl, combine cabbage, tomatoes and radishes. In a separate bowl, add the remaining ingredients. Mix together and toss with vegetables.
