Carrot Muffins
Carrot muffins are a colorful and healthy way to end a meal or start your day. This recipe, with flavors of cinnamon and brown sugar, yields muffins that are both rich in flavor and nutrition.
Ingredients
For 8 people
- 2/3 cup(s) self-rising flour, sifted
- 2/3 cup(s) brown sugar
- 1 teaspoon(s) ground cinnamon
- 2 eggs, lightly beaten
- 1/2 cup(s) canola oil or vegetable oil
- 2 cup(s) grated carrots
- 1 1/2 tablespoon(s) poppy seeds
Directions
Pre heat oven to 180 degrees; combine all dry ingredients and carrots in bowl. In separate bowl mix oil and eggs together, and then add to dry ingredients, mix till combined. Divide the mixture into muffin tins that have been oiled lightly with cooking spray. Bake in oven for 25 minutes or until skewer comes out clean. Cool in pan for a few minutes before transferring to wire rack to cook.
