Carrot & Sweet Potato Purée
This easy-to-follow, microwave recipe will give your family a healthy kick of vitamins and minerals with two super vegetables. This simple dish is a perfect substitute for regular mashed potatoes.
Ingredients
For 4 people
- 5 carrots, sliced
- 5 2/3 cup(s) canned sweet potatoes, drained
- 1 cup(s) sour cream
- 3/4 cup(s) water
- 1/4 cup(s) butter or margarine
- 3 teaspoon(s) sugar
- 1 teaspoon(s) grated lemon rind
- 1/2 teaspoon(s) ground nutmeg
- 1/4 teaspoon(s) salt
- 1/4 teaspoon(s) ground black pepper
- 1/8 teaspoon(s) ground red pepper
Directions
1. Microwave carrots with 3/4 cup water in a glass bowl at HIGH for 10 to 12 minutes or until tender. Drain extra water.
2. Process carrot and butter in a food processor until smooth. Transfer to a large bowl.
3. Process sweet potatoes until smooth. Add to carrot mixture.
4. Stir together sweet potato mixture, sour cream, and remaining ingredients. Spoon into a 1 1/2-quart glass dish. Cover and chill up to 2 days, if desired; let stand at room temperature 30 minutes. Microwave at HIGH 4 to 5 minutes or until thoroughly heated.
