Cauliflower Salad
What do you cauliflower? Simply delicious. When the same old side salads have you snoozing, this mouthwatering medley of fresh veggies is sure to wake up your tastebuds. Prepared with tarragon vinegar, you'll love the tang of this tasty salad that will definitely become a tradition.
Ingredients
For 2 people
- 1 cup(s) fresh cauliflower
- 2 ounce(s) thinly sliced red onion, quartered
- 2 tablespoon(s) sliced stuffed green olives
- 2 tablespoon(s) olive oil
- 1 tablespoon(s) tarragon vinegar
- 1/4 teaspoon(s) sugar
- 1/8 teaspoon(s) salt
- 1/8 teaspoon(s) paprika
- 2 cup(s) torn leaf lettuce
- 2 tablespoon(s) crumbled blue cheese
Directions
In a small bowl, combine the cauliflower, onion and olives. In another bowl, whisk the oil, vinegar, sugar, salt and paprika. Drizzle over cauliflower mixture and toss to coat. Refrigerate for 1 hour or until chilled. Just before serving, add the lettuce and blue cheese; toss.
