Cheese, Spinach & Mushroom Dip
Cheese, spinach and mushrooms each have enough flavor to stand on their own. Now imagine the inviting taste of this divine dip that blends all three. Delicious on breads and crostini, this recipe packs huge flavor in each bite. For a healthier version, opt for light sour cream and low-fat cheeses.
Ingredients
For 1 people
- 2 tablespoon(s) butter
- 3 cup(s) white mushrooms, stems removed and caps chopped (or portabella, shitake or any wild mushrooms)
- 3 teaspoon(s) (1 tbsp) garlic, minced
- 2 cup(s) half-and-half
- 32 ounce(s) (4, 8 oz packages) cream cheese
- 3 cup(s) shredded smoked gouda
- 2 cup(s) spinach, roughly chopped
- 1/2 teaspoon(s) salt to taste
- 1/2 teaspoon(s) black pepper to taste
Directions
- In medium sauté pan, melt butter over medium heat and sauté mushrooms and garlic until soft, about 6 to 8 minutes. Remove from heat and set aside.
- In medium saucepan, combine half and half, cream cheese and Gouda over low heat. Stir constantly until ingredients have incorporated. Add mushroom mixture and spinach to cheese mixture.
- Season with salt and pepper and serve immediately with crackers, French bread rounds or fresh vegetables for dipping.
