Cheesy Chili Rice
Spice up your supper with some savory chili cheese rice. This warm meal will win over the most finicky of eaters. For those who don't have any chili powder on hand, feel free to use a can of chopped jalapenos instead. Get ready to fill your belly with cheesy chili goodness.
Ingredients
For 4 people
- 1/2 cup(s) rice
- 16 ounce(s) ground beef
- 4 floz water
- 1 clove garlic, minced
- 2 teaspoon(s) chili powder
- 4 ounce(s) cheddar cheese cut in chunks
- 1/4 cup(s) olive oil
- 1 can of tomatoes
- 3/4 cup(s) chopped raw onions
- 1 1/2 teaspoon(s) salt
- 16 tablespoon(s) rice olives, minced
Directions
- Combine rice and olive oil in skillet. Cook over low heat, stirring constantly until rice is pale gold. Add beef and cook, stirring until meat loses its red color. Stir in tomatoes, water, onion, garlic, salt and chili powder. Cover and cook over low heat for about 40 minutes, or until liquid is absorbed and rice is tender. Stir in olives with chunks of cheese. Cover and heat about 10 minutes or until cheese melts.
