Chicken Black Bean Soup
This savory soup is black bean at it’s best. There’s no way your loved ones are going to blackball this chicken black bean soup. In fact, they'll likely love every spoonful especially when they find out it's healthy.
Ingredients
For 6 people
- 2 teaspoon(s) canola oil
- 1 medium onion, finely chopped
- 1 medium carrot, chopped
- 1/2 large red pepper
- 1 teaspoon(s) cumin
- 1 teaspoon(s) chili powder
- 3 3/4 cup(s) reduced sodium black beans, rinsed and drained
- 3 cup(s) fat-free, low-sodium chicken broth
- 16 ounce(s) jar mild salsa
- 12 ounce(s) cooked skinless white-meat chicken, chopped
Directions
Heat oil on medium heat in a Dutch oven or soup pot. Sauté onions, carrots and peppers for 5 minutes. Stir in cumin and chili powder and cook for 1 minute. Add black beans, broth and salsa. Bring to a boil, then cover and simmer for 15 minutes. Stir in cooked chicken and simmer for 5 more minutes.
