Chickpeas in Chicken Rice Soup

Ingredients

- 1/4 cup(s) butter
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup(s) uncooked rice
- 8 cup(s) chicken stock
- 1/4 teaspoon(s) bay leaves (1 bay leaf)
- 1 3/4 cup(s) chickpeas beans, drained
- 3/4 cup(s) chopped green chili peppers
- 2 teaspoon(s) cumin
- 1 dash(es) salt
- 1 dash(es) pepper
- 15 ounce(s) black beans, drained (optional)
- 1/2 cup(s) enchilada sauce (optional)
- 2 teaspoon(s) Tabasco sauce (or other hot sauce)
- 1 tablespoon(s) Grated cheese, cheddar or Monterey jack, for topping
Directions
In a heavy saucepan or Dutch oven, warm the butter over low heat. When melted, add the onion and garlic. Cover the pan and cook for 5 minutes. Stir in the rice and sauté it briefly until the grains become opaque. Pour in the stock, add the remaining ingredients, and simmer for 25-30 minutes, until the rice is very soft and serve hot.
