Southwestern Cheese Fondue
This cheese fondue will melt in your mouth, and in your pans. Serve this dish up with fresh bread cubes and mixed vegetables.
Ingredients
For 6 people
- 2 cup(s) shredded pepper jack cheese
- 2 cup(s) shredded white Cheddar cheese (mild to medium)
- 2 tablespoon(s) plus 1 1/2 tsp. cornstarch
- 1 teaspoon(s) minced garlic
- 1 1/2 cup(s) chicken broth
- 6 tablespoon(s) lemon juice
- 1/4 teaspoon(s) dried oregano
- 1/4 teaspoon(s) cumin
- 1/4 cup(s) bunch scallions, thinly sliced (1 bunch)
- 2 tablespoon(s) chopped ripe black olives
Directions
In medium size bowl toss the shredded cheese with the cornstarch. In medium size saucepan, heat the broth, lemon juice, garlic, oregano and cumin until barely simmering. Add the cheese, a handful at a time, stirring until the cheese is melted before adding more. When all the cheese has been added, stir in the scallions and olives. Transfer fondue to a fondue pot and keep warm over a fondue burner. Serve with vegetables or bread for dipping.
