Chili Chicken Corn Salad
Trust the three C's -- chili, chicken and corn. Serve this excellent salad on lettuce, garnished with cherry tomatoes and olives. Who needs A’s or B’s? When it comes to delicious taste, these C’s make the grade!
Ingredients
For 6 people
- 2 fresh corn
- 4 cup(s) chicken, cooked
- 1 cup(s) green pepper, diced
- 2 tablespoon(s) mayonnaise
- 2 teaspoon(s) lemon juice
- 1 teaspoon(s) salt
- 1 teaspoon(s) chili powder
- 1/4 teaspoon(s) black pepper
- 6 lettuce leaf
- 1/3 cup(s) cherry tomatoes
- 1 tablespoon(s) olives
Directions
- Cook fresh corn and remove from ears (4 ears).
- Combine corn with chicken and green peppers; set aside.
- Blend mayonnaise with lemon juice, salt, chili powder and black pepper.
- Pour over corn mixture and toss gently.
