Chowder-Like Veggie & Pasta Soup

Ingredients
For 10 people
- 1/2 floz salad oil
- 1 clove garlic, minced
- 1 carrot, chopped
- 2 pieces celery, chopped
- 1 small onion, chopped
- 2 cup(s) chicken broth
- 2 cup(s) vegetable juice or water
- 1 (16 oz.) can tomatoes and juice
- 1/4 teaspoon(s) dried basil
- 1/4 teaspoon(s) dried thyme or oregano
- 1 dash(es) salt
- 1 dash(es) pepper
- 15 3/4 ounce(s) can green peas
- 1/2 cup(s) elbow macaroni
- 1/4 cup(s) Parmesan cheese
Directions
- Heat oil in Dutch oven or heavy saucepan. Add garlic, carrot, celery and onion. Saut 5 minutes. Add broth, vegetable juice, tomatoes, basil, thyme, salt, pepper, and green peas. Bring to boil. Simmer 10 minutes. Add macaroni. Cook 10-15 minute, stirring occasionally until macaroni is tender.
- Serve in soup bowls topped with a sprinkle of Parmesan cheese.
