Chowder-Like Veggie & Pasta Soup

Ingredients

For 10 people

  • 1/2 floz salad oil
  • 1 clove garlic, minced
  • 1 carrot, chopped
  • 2 pieces celery, chopped
  • 1 small onion, chopped
  • 2 cup(s) chicken broth
  • 2 cup(s) vegetable juice or water
  • 1 (16 oz.) can tomatoes and juice
  • 1/4 teaspoon(s) dried basil
  • 1/4 teaspoon(s) dried thyme or oregano
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 15 3/4 ounce(s) can green peas
  • 1/2 cup(s) elbow macaroni
  • 1/4 cup(s) Parmesan cheese

Directions

  1. Heat oil in Dutch oven or heavy saucepan. Add garlic, carrot, celery and onion. Saut 5 minutes. Add broth, vegetable juice, tomatoes, basil, thyme, salt, pepper, and green peas. Bring to boil. Simmer 10 minutes. Add macaroni. Cook 10-15 minute, stirring occasionally until macaroni is tender.
  2. Serve in soup bowls topped with a sprinkle of Parmesan cheese.
