Classic Fettuccine
Classic fettucine prepared with spinach and mushrooms is a simple dinner dish that never gets old. You can keep the dish vegetarian or serve with slices of grilled chicken for extra protein.
Ingredients
For 4 people
- 2 tablespoon(s) extra virgin olive oil
- 1 1/2 ounce(s) dried porcini mushrooms, chopped
- 16 ounce(s) fettucine
- 1/2 cup(s) butter
- 1/3 cup(s) Parmesan ceese
- 1/2 cup(s) spinach
Directions
Soak mushrooms for about 1/2 hour in cold water. Melt butter, add chopped mushrooms and spinach and cook for 5 minutes. Cook pasta, drain and mix in pan with the other ingredients. Add grated Parmesan cheese and white truffle oil. Serve hot.
