Classy Stuffed Sweet Potatoes in Oven
These classy stuffed sweet potatoes, marinaded in orange juice, spell sweet relief for your side dish rut.
Ingredients

- 8 medium-sized sweet potatoes
- 1/4 cup(s) orange juice
- 3 tablespoon(s) butter, melted
- 1/4 teaspoon(s) salt
- 1/4 teaspoon(s) ground cinnamon
- 1 teaspoon(s) brown sugar
Directions
Heat oven to 350 degrees. Rinse and dry sweet potatoes well; place potatoes on a baking sheet and bake 55 to 60 minutes or until tender. DON'T turn off oven. Cool potatoes until easy to handle. When potatoes are cool, cut potatoes in half lengthwise and with spoon scoop out pulp from 8 halves and put into large bowl. Discard skins. Scoop out pulp from remaining 8 potato halves, leaving 1/4 inch potatoes intact to make the shells. With electric mixer, beat potato-pulp, orange juice, 2 tbsp. butter, cinnamon and salt until smooth. Place potato mixture back into the saved potato shells. Sprinkle remaining 1 tbsp. butter and the brown sugar over top of stuffed potatoes. Bake 10 to 15 minutes until potatoes are heated.
