Cottage Cheese Dessert Pancakes
This breakfast recipe takes the cake. These hearty pancakes are prepared with the healthiest of ingredients, but are so rich and delicious they could pull double duty as dessert. Your family will never know how healthy they are.
Ingredients
For 1 people
- 2/3 cup(s) cottage cheese
- 2 ounce(s) unsweetened frozen fruit juice concentrate, any kind
- 2 eggs
- 2 tablespoon(s) safflower or other mild tasting oil
- 3/4 cup(s) unbleached white flour
- 1/4 cup(s) buckwheat flour
- 1 teaspoon(s) baking powder
- 1 nutmeg
Directions
In a blender, whip together cottage cheese, fruit juice concentrate, eggs, and oil. Pour mixture into a bowl, combine with flours and baking powder, and beat. Drop by tablespoonfuls onto hot (medium setting) oiled or buttered griddle. Sprinkle each pancake with nutmeg. After flipping and cooking completely, serve pancakes with nutmeg side up.
