Creamy Chicken Noodle Casserole

There's nothing simpler than a one pot meal that takes little effort. Use your noodles and prepare this creamy chicken noodle casserole that will have your family coming back for seconds... and thirds.

Creamy Chicken Noodle Casserole


For 4 people

  • 8 ounce(s) mini lasagna pasta, uncooked
  • 1/2 cup(s) fat free sour cream
  • 1 cup(s) low fat chicken broth
  • 4 tablespoon(s) grated Parmesan cheese
  • 1/2 cup(s) egg substitute
  • 6 teaspoon(s) dijon mustard
  • 1 1/2 cup(s) chopped fresh broccoli florets, blanched and drained
  • 12 ounce(s) boneless, skinless chicken breast
  • 1/10 cup(s) bread crumbs


Preheat oven to 350° F. Prepare pasta according to package directions, drain. Blend sour cream, 1/2 of the Parmesan cheese, chicken broth, egg substitute and mustard until blended. Add pasta, broccoli and chicken and mix well. Spray a 9 x 12 baking dish with cooking spray. Pour mixture into dish and sprinkle with bread crumbs and remaining Parmesan cheese. Bake uncovered for 35 minutes until golden brown.
