Crockpot Black Bean Soup

This crockpot classic creates a soul-warming stew that's perfect for those cold winter nights. Set it and forget it - the longer it cooks, the more developed the flavors will become.


Crockpot Black Bean Soup

Ingredients

For 8 people

  • 3 1/2 cup(s) can diced tomatoes, undrained
  • 2 1/2 cup(s) black beans, drained and rinsed (19 oz can)
  • 2 1/2 cubes vegetable bouillon
  • 1 medium onion, chopped
  • 3 to 4 garlic cloves, crushed
  • 2 cup(s) frozen green beans
  • 2 teaspoon(s) ground cumin
  • 2 teaspoon(s) ground ginger
  • 2 teaspoon(s) curry powder

Directions

Combine all veggies, beans and spices in crock pot. Dissolve bouillon cubes in hot water. Add to pot. Add additional water or stock if needed. Cook on low for 6-8 hours.
