Crunchy Chicken in Pita

Crunchy Chicken in Pita


For 4 people

  • 1/4 cup(s) whole almonds
  • 8 ounce(s) sliced, skinless chicken breasts, cooked with no salt
  • 1/4 cup(s) dried apricot quarters
  • 1 celery stalk, chopped
  • 1/2 cup(s) fat-free plain yogurt
  • 2 tablespoon(s) chopped fresh cilantro
  • 3 teaspoon(s) Dijon mustard
  • 1/3 tablespoon(s) orange zest
  • 1/3 tablespoon(s) honey
  • 2 whole-wheat pitas


  1. Preheat oven to 350 degrees. Place almonds on baking sheet for 7-8 minutes, or until roasted. Cool. In a bowl, mix almonds and remaining ingredients. Spoon 1/2 cup chicken salad into each pita half. Serve with mixed greens drizzled with oil and vinegar.
