Delicious Zucchini Bisque
This bisque can be served hot or as a cold soup. The zucchini is packed with powerful nutrients and is a great way to sneak those veggies into a healthy and hearty meal.
Ingredients
For 4 people
- 2 cup(s) chopped zucchini
- 1 cup(s) water
- 1/2 cup(s) tomato juice
- 2/3 cup(s) chopped onions (1 tbsp.)
- 1 bouillon cube
- 1 teaspoon(s) basil
- 8 ounce(s) cream cheese
Directions
In a saucepan combine zucchini, water, tomato juice, onion, bouillon cube and basil. Cover; simmer for 20 minutes. Pour into blender container. Add cream cheese cut into cubes and process until smooth. Return to saucepan to heat thoroughly to serve hot. Alternately, chill thoroughly to serve as a cold soup.
