Dried Cherry Dressing
No stuffing here -- this dressing bypasses the bird and bucks tradition with tart and delicious dried cherries!
Ingredients
For 12 people
- 12 tablespoon(s) butter, without salt
- 2 pound(s) onion, diced white
- 2 cup(s) celery, diced
- 2 teaspoon(s) spices, sage, ground
- 10 cup(s) stale white bread
- 6 cup(s) soup, chicken broth, low sodium, canned
- 2 teaspoon(s) salt, table
- 4 teaspoon(s) spices, pepper, black
- 3 cup(s) parsley, fresh, chopped
- 2 cup(s) cherries, dried
Directions
Melt butter in a large skillet. Add onions and celery, and cook over medium heat until onions are translucent, about 10 minutes. Add sage, stir to combine, and cook 3 to 4 minutes. Add 1/2 cup stock, and stir well. Cook for about 5 minutes, until liquid has reduced by half. Transfer onion mixture to a large mixing bowl. Add all remaining ingredients, including the remaining stock; mix to combine.
