Egg Casserole
You've got hungry mouths to feed and less than 30 minutes to do it. Start the morning off the right way with this easy egg casserole that combines cheese, peppers and pimientos for flavor. It's a slice of heaven. So get cracking!
Ingredients
For 4 people
- 1/4 cup(s) green peppers, chopped
- 2 tablespoon(s) butter
- 6 beaten eggs
- 8 ounce(s) cheese spread
- 1/10 cup(s) milk
- 2 tablespoon(s) chopped pimento
- 1 dash(es) pepper, to taste
- 3/4 cup(s) soft bread crumbs
- 1 tablespoon(s) butter, melted
Directions
In a skillet, cook pepper in the 2 tbsp. butter until it is tender. Add eggs and scramble just until set. Pour into a 1-quart casserole, set aside. In a small bowl, stir together cheese spread and milk. Stir in pimiento and pepper. Pour mixture over the scrambled eggs. Combine breadcrumbs and 1 tbsp. melted butter: pour over egg mixture. Bake uncovered at 350 degrees for 20 minutes or until heated through.
