Fabulous Potato Salad

Fabulous darling, simply fabulous! Pile on the potatoes with this salad. Always a good side dish, the savory potato salad is certainly worth few minutes of preparation.

Fabulous Potato Salad


For 1 people

  • 6 medium red potatoes, unpeeled
  • 1 teaspoon(s) salt
  • 4 diced raw bacon
  • 1/2 cup(s) diced onion
  • 1/2 tablespoon(s) cornstarch or flour
  • 4 teaspoon(s) granulated sugar
  • 1 teaspoon(s) salt
  • 1/4 teaspoon(s) pepper
  • 1/4 cup(s) cider vinegar
  • 4 floz water
  • 1/4 cup(s) minced onion
  • 2 tablespoon(s) snipped parsley
  • 1 teaspoon(s) celery seeds
  • 1/2 cup(s) sliced radishes


  1. Cook potatoes in their jackets in boiling water with 1 tsp. salt in covered saucepan until fork tender, about 35 minutes.
  2. Peel and dice or partially mash potatoes. In small skillet, fry bacon until crisp. Add diced onion and sauté until tender but not brown.
  3. In bowl, mix cornstarch or flour, sugar, 1 tsp. salt and the pepper. Stir in vinegar and water until smooth. Add to bacon; simmer, stirring until thickened. Pour hot dressing over potatoes and add 1/4 cup minced onion, parsley, celery seeds and radishes.
