Fresh & Cold Sesame Noodles
These noodles are sure to bring you oodles of praise at the dinner table. Crunchy cucumbers underline the sesame flavor in the sauce. This is an excellent summer dish. Serve it with bean sprouts and/or short ribs.
Ingredients
For 6 people
- 2 teaspoon(s) tahini (sesame paste)
- 10 2/3 tablespoon(s) smooth or chunky unsweetened peanut butter
- 1 1/2 tablespoon(s) white vinegar or rice vinegar
- 1 cup(s) chicken stock
- 1 teaspoon(s) powdered ginger
- 2 teaspoon(s) soy sauce
- 8 ounce(s) fettuccine, spaghetti, or Chinese egg noodles
- 2 tablespoon(s) peanut oil
- 2 whole scallions, sliced crosswise
- 1 whole cucumber, peeled, seeded, and diced
- 1 cup(s) soy bean sprouts, rinsed and drained
- 1 tablespoon(s) chili oil
Directions
In a small bowl, prepare the sauce by combining the tahini, peanut butter, vinegar, stock, ginger, and soy sauce. Boil the noodles according to the package directions or until slightly al dente. Drain the noodles, and then toss with 2 tbsp. of peanut oil just to coat. Toss with the sauce, then refrigerate. Just before serving, garnish with scallions, cucumber, and bean sprouts and serve with chili oil to taste.
