Fruit and Cheese Log
Feeling a little fruity? This dried fruit and cheese log goes great on bagel chips or crackers. Enjoy it as your breakfast or a mid-morning snack.
Ingredients
For 1 people
- 1/2 cup(s) snipped dried apricots, soaked in hot water for one hour
- 8 ounce(s) reduced fat Swiss cheese, grated
- 4 ounce(s) fat free cream cheese
- 2 tablespoon(s) orange juice
- 1/3 cup(s) golden raisins
- 1/4 cup(s) dates, chopped
- 1/4 teaspoon(s) salt
- 1/2 cup(s) sliced or chopped almonds, toasted
Directions
Mix all ingredients together except almonds. Form into 2 logs and roll in toasted almonds. Wrap in plastic wrap and chill. Serve with plain or cinnamon bagel chips.
