Garlic Mussels

Ingredients
For 1 people
- 10 mussels
- 1 tablespoon(s) clarified butter
- 2 teaspoon(s) minced garlic
- 2/3 tablespoon(s) shallots, minced
- 1/2 teaspoon(s) Old Bay Seasoning
- 1/2 cup(s) Roma tomatoes, diced
- 1/4 cup(s) scallions, diced
- 2 cup(s) fresh spinach
- 4 floz white wine
- 1/2 cup(s) chicken broth
- 1/2 cup(s) whole butter
Directions
1. Pour butter in a large hot sauté pan. Add garlic and shallots and cook 1-2 minutes.
2. Add mussels and Old Bay and stir. Add tomatoes and scallions, while continuing to stir.
3. Deglaze pan with wine and add spinach.
4. Add a touch of broth and mound with butter.
Rinse mussels under cold water and remove beards. All mussels should be closed or at least close when tapped.
