Golden Chicken-Salad Panini

All chicken salad is not created equal. This pared down version of a normally fattening favorite is served on panini, making it even more appetizing.

Golden Chicken-Salad Panini


For 4 people

  • 2 1/2 cup(s) chicken breast, cooked and chopped
  • 4 tablespoon(s) light mayonnaise
  • 2 tablespoon(s) bacon bits
  • 2 tablespoon(s) thin green onion slices
  • 2 tablespoon(s) light ranch salad dressing
  • 4 multigrain panini bread slices
  • 8 thin tomato slices
  • 4 reduced fat sharp cheddar cheese, sliced


  1. Mix chicken, mayonnaise, bacon, and onion and dressing; spread onto 4 open panini. Top with tomatoes, cheese and remaining bread.
  2. Cook in preheated grill pan or skillet sprayed with cooking spray on medium heat until golden.
