Hash Browns
A classic diner breakfast doesn't have to be dripping with fat and carbs. These zucchini-infused pancakes will satisfy your hankering for hash, stat.
Ingredients
For 4 people
- 3 teaspoon(s) bacon drippings
- 1/2 small onion, diced
- 1 cup(s) grated zucchini
- 1/4 teaspoon(s) dried thyme
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
- 1 dash(es) paprika, to taste (optional)
Directions
Sauté onion in the bacon fat until soft, then add the zucchini. Cook over medium heat until crisp outside and soft inside, about 8 minutes. Add seasonings near end of cooking time. Sprinkle with paprika just before serving.
