Healthful Carrot Bread
Orange you glad carrots are good for you? This sweet treat makes a fabulous snack, brunch dish or even the perfect hostess gift.
Ingredients
For 1 people
- 1/4 cup(s) sugar
- 1/2 cup(s) orange juice
- 5 1/2 tablespoon(s) corn oil
- 1 egg
- 1 1/2 teaspoon(s) vanilla
- 1 cup(s) all-purpose flour
- 1 cup(s) whole wheat flour
- 1 teaspoon(s) baking powder
- 1/2 teaspoon(s) baking soda
- 3 teaspoon(s) cinnamon
- 1/4 teaspoon(s) salt
- 1 1/4 cup(s) grated carrots
Directions
Beat together sugar, oil, egg, orange juice and vanilla. Combine dry ingredients and add to wet mixture; blend in grated carrots. Bake in a 9x5 inch loaf pan at 350 degrees for 40 to 50 minutes.
