Healthy Swedish Meatballs
Behold the marvelous meatball! The secret to making Swedish meatballs is good meat- finely ground, finely chopped onions and thorough mixing of ingredients.
Ingredients
For 10 people
- 1 large onion, very finely chopped
- 1/2 floz water
- 24 ounce(s) lean ground beef
- 8 ounce(s) ground pork
- 1/4 teaspoon(s) ground allspice
- 1/3 teaspoon(s) ground cloves
- 1/2 teaspoon(s) salt
- 2 cup(s) whole wheat bread crumbs
- 1/5 cup(s) flour
- 2 cup(s) skim milk
- 4 1/2 teaspoon(s) low-sodium beef bouillon granules
Directions
In a covered saucepan, heat onion with water until onion pieces are soft. Mix onion, beef, pork, allspice, cloves, salt and bread crumbs thoroughly. Form into 30 medium balls. In skillet (or in oven at 350 degrees), brown meatballs. Remove balls to casserole dish. Make gravy by mixing together flour, milk, bouillon granules and drippings in the same skillet. Cook until thickened. Pour gravy over meatballs. Bake at 350 degrees or simmer until ready.
