Heart Healthy Spaghetti & Mushroom
The next time you're in the mood for Italian, use your noodle and cook up a batch of this heart healthy spaghetti. The fresh mushrooms lend an earthy flavor for a satisfying meal.
Ingredients
For 1 people
- 2 tablespoon(s) olive oil, unsalted
- 1 cup(s) sliced fresh mushrooms
- 1/3 cup(s) chopped onion
- 1 clove garlic, minced
- 2 cup(s) can no-salt-added tomatoes, chopped
- 12 tablespoon(s) can no-salt-added tomato paste
- 4 floz water
- 3 teaspoon(s) sugar
- 1/4 teaspoon(s) bay leaves (1 bay leaf)
- 1/10 tablespoon(s) basil
- 1/4 teaspoon(s) oregano
- 1/8 teaspoon(s) freshly ground black pepper
- 1 cup(s) pkg. of spaghetti
Directions
Melt butter in large non-stick skillet over medium-high heat. Add mushrooms, onion and garlic. Saut until onion is tender. Stir in remaining ingredients except spaghetti. Cover and simmer over low heat 2 hours, stirring occasionally. If sauce appears too thick, add additional water. Remove bay leaf. Cook spaghetti according to package directions, omitting salt. Drain. Pour sauce over spaghetti and serve.
